Hainan Chicken: Origins
Our Signature Dish. Explained.
Hainan chicken rice traces its roots to the island of Hainan in southern China where it began as a humble dish: poached whole chicken served with seasoned rice and a side of broth. Chinese immigrants brought it across Southeast Asia, where it evolved into beloved local variations—in Singapore, Malaysia, Thailand, and Vietnam.
Why is it so celebrated? It is everything good food should be: affordable, flavorful, balanced, and comforting. Built on simple ingredients, it delivers incredible depth and satisfaction when done right.
It is a staple of hawker centers and street stalls across Southeast Asia. It is an everyday meal: affordable enough to eat often, flavorful enough to crave, and nutritionally fulfilling. Its appeal cuts across class, age, and background. Whether served on a plastic tray at a food court or plated in a high-end restaurant, Hainan chicken rice is a dish that is humble yet deeply respected.
In Southern Vietnam, it became known as cơm gà Hải Nam, with a lighter, more aromatic style often paired with vibrant herbs and fresh sauces. At Nam An we honor the legacy of this dish by staying true to its roots while refining every detail so that each plate reflects care, craft, and comfort.

Hainan Chicken: How it's Made
Simple Ingredients. Serious Technique.
At Nam An we take pride in the quality of our food, and our guests tell us nobody makes chicken rice as well as we do. In fact, for many Asian immigrants and Asian-Americans, Nam An is the place to come eat chicken rice that tastes like home.
At Nam An we prepare our Hainan chicken rice the traditional way with a few refinements of our own. Free-range chickens are locally sourced, and whole, bone-in chickens are slow-poached for maximum tenderness and natural flavor. Each chicken is chilled, rested, and butchered to order. Each plate has been made fresh, and each piece of chicken is consistently juicy and flavorful.
The rice is just as important. We use rendered chicken fat to saute aromatic vegetables such as ginger before cooking the rice in a seasoned broth. Each grain of rice is rich, savory, and full of depth.
Your meal comes with a cup of clear aromatic broth, house-made sauces, and the confidence that every component has been prepared with intention and care.

Hainan Chicken: How to Eat
There’s No Wrong Way—Only Your Way.
Hainan chicken rice is traditionally served with three dipping sauces that transform the dish with contrast, balance, and personalization.
Chili Sauce
Made fresh every morning, this is our most-requested condiment. Vibrant and punchy, this sauce adds heat, acidity, and brightness to the dish. Designed to wake up the palate, it cuts through the richness of the rice and chicken while remaining balanced.
Ginger Sauce
Another condiment guests can't get enough of. It is simple, aromatic, and savory. Made from finely minced ginger and scallions, it adds warmth and depth to each bite of chicken. It is light yet powerful, enhancing the natural flavors of the poached chicken without overpowering it.
Sweet Soy Sauce
Dark, rich, and slightly sweet, this sauce ties everything together. Blended in house, it brings a hit of umami to each bite. Drizzle it over your rice or use it as a dip; it lingers in the best way.
How to eat it? However you like. Here are a few popular options:
- Dip chicken into each sauce separately to savor each one, or mix them together for a bold combo.
- Pour your favorite sauce directly onto the chicken and rice.
- Spoon broth over your rice or chicken for added comfort.
We bring the flavor. You make it yours.

Hainan Chicken: Why it Matters
The Dish That Built Nam An.
Our family started with this dish. It was chicken rice that helped us rebuild after the 2008 financial crash. My father poured years into perfecting it, refining every detail one batch at a time. He even traveled across Southeast Asia to study how different cultures prepared it: from Singapore to Vietnam to Malaysia.
This dish represents more than flavor. It's love, memory, craft, dedication, and survival—served warm. It's how we got our start, and it's still the most important thing we make. Whether you're trying it for the first time or coming back for the hundredth, we hope this dish brings you the same comfort it has brought our family and community for years.
